Mystery Creek Reserve Chardonnay
Harvested 14/04/13 Bix 22.8 TA 8.6 pH 3.26. Last harvest of Original clones 6 and Mendoza grapes. Whole bunch pressed with minimal juice settling. Juice was run off directly to a mixture of baroques by Damy/Bijon, and a puncheon of wild fermented wine was later added to the blend. Bottled after 9months in barrel in early Feb/2014.
A Creamy and rich flavour with a nutty and honeysuckle note with some underlying oak toast.
Wine shows a full/soft entry with clean stone fruit, white peach fruit flavours. Secondary characters of lanolin and oak richness combine to give a full mouth feel which is well balanced by a moderate alcohol level and clear acidity structure that shows only slight malolactic influence.
Serve lightly chilled (12-14 C) Suitable with shellfish dishes or pan-seared fresh fish that incorporates rich creamy sauces, or chicken and white meat dishes with similar richness and nutty ingredients. A portion of the wine should replace any vinegar that may be required for ingredients in the course.
